Spicy Pickled Carrots and Quick Pickled Cucumbers (Sparkles)

Thug Kitchen authors say you can use these pickled concoctions with all your tacos and burritos or the brown rice bowls.  I also like it on a bed of spinach.

    Are these really yummy? I feel like I need some good jars in my life for things like the salad dressings.
