Apple Baked Beans and Roasted Broccoli and Millet Pilaf with roasted garlic (Kacie)

As sick August continues here, I thought we were going to go a day with out the doctor. And then Candler broke out in hives and Quintin started to. Awesome. We were able to get in and out of the doctor (which is a feat), confirm they are allergic to the antibiotic shots they were taking, switch meds, and get back home in time to make a real dinner.

I started by roasting the garlic. Why haven't I done that before? It was so easy, smelled amazing, and George was eating cloves straight from the pan.

I have been on a hunt to find millet since this project started. My awesome mother in law watched the boys for a couple of hours today so I could go to a yoga class. I used a few minutes of my precious time to stop into ANOTHER grocery store looking for millet. In the end, I just used quinoa. I can't give much more of my life to looking for millet.

The roasted broccoli pilaf was yummy and solid. A nice way to eat broccoli and good flavors.

The apple baked beans had an outstanding sauce. But, the cooking time was way way off. I gave myself almost 2 hours, but they really were not cooked yet. I kept cooking them until I went to bed. If I do this recipe again (and it was yummy enough to do again), I'll put it in my crock pot. I love that thing, and I look for reasons to use it. This is one of those reasons.

  1. I was going to suggest quinoa!

  2. When I asked the people at Publix, they told me that the only millett they had was in bird food.

  3. And by the way, I love me some garlic, but that clove straight off the pan was gross. Not recommended.

  4. Glad that was cleared up because it sounded like that was the way to eat it. The whole cookbook could be bird food....
