As soon as I started making it, I got nervous about the amount of coconut products in here. George loves banana pudding, which is why I thought it would be a good idea, but he hates coconut. BUT--I was too far in, and I couldn't possibly turn back, so on I went.
The crust is ok. It's hard to get that buttery flavor without...well...butter.
The custard is delicious. It took a lot of stirring to make it, which is why it is certainly a nap time recipe.
The coconut milk whipped cream doesn't whip up a ton. Of course, I didn't take the time to chill my Kitchenaid, so I might have been the problem. It does make for a tasty topping.
All in all, this took plenty of work, but it was a nice special occasion pie! I think it's better the next day. All of the parts have the chance to kind of meld together. Since I am the one who eats most of the leftovers, that's good news for me!
